Pressure Cooker Deli-Style Beef Brisket Recipe
Makes 6 servings
Ingredients: 3 pounds (1.5 kg) beef brisket, trimmed, 2 tablespoons minced garlic, 2 teaspoons Dijon mustard, 1 teaspoon onion powder, 1 large yellow onion, peeled, halved and sliced into thin half-moons, 1/4 cup (60 ml) tomato paste
Instructions: In a small mixing bowl, combine the garlic, Dijon mustard, and onion powder. Stir well. Place beef brisket flatter side down on the cutting board. Rub the spice paste all over the meat.
Place sliced onions on the bottom of the pressure cooker, set rubbed brisket coated side up in the pressure cooker. In a medium mixing bowl, combine 3 cups (750 ml) water and tomato paste. Whisk until smooth. Pour the tomato mixture around the beef brisket. Close the pressure cooker and lock the lid. Set the burner heat to high pressure. When the cooker reaches high pressure, reduce heat to low. Set timer to cook for 45 minutes.
Unlock the pressure cooker and remove the lid. Transfer cooked beef brisket to a large carving board, reserved tomato sauce. Cool for 10 minutes. Slice cooled meat and serve with reserved tomato sauce.
Peppered Beef Brisket with Marmalade Caramel Recipe
Makes 6 servings
Ingredients: 3 pounds (1.5 kg) beef brisket, trimmed, 1 tablespoon coarsely ground black pepper, 1 tablespoon almond oil, 1 medium yellow onion, peeled and chopped, 6 tablespoons orange marmalade, 2 tablespoons soy sauce, 3/4 cup (180 ml) beef broth
Instructions: Rub beef brisket with black pepper and set aside. In a pressure cooker, heat olive oil over medium-high heat. Add seasoned brisket and brown well on both sides, for 3-4 minutes per side, turning once. Transfer browned meat to a cutting board.
Add chopped yellow onion to the pot. Cook, stirring, until translucent, for about 4 minutes. Stir in orange marmalade, soy sauce, and beef broth until the marmalade dissolved. Return browned beef brisket to the pot.
Cover the pressure cooker and lock the lid. Set burner heat to high pressure. When the cooker reaches high pressure, reduce heat to low. Set timer to cook for 40 minutes.
Unlock pressure cooker, using a Quick Release Method. Open the pot. Transfer cooked beef to a carving board. Set aside for 10 minutes, allowing cooling. Defat the sauce in the pressure cooker. Boil it over medium-high heat, stirring, until the sauce has reduced by half and forms to a thick glaze, for about 7 minutes.

Ingredients
- 1 cup (250 ml) canned crushed tomatoes
- 2 tablespoons packed brown sugar
- 2 tablespoons cider vinegar
- 1½ tablespoons each: tomato paste and smoked paprika
- 1 teaspoon Worcestershire sauce
- 1 teaspoon ground coriander
- 1/2 teaspoon each: ground allspice, cloves
- 1/4 teaspoon dry mustard
- 1 tablespoon olive oil
- 3 pounds (1.5 kg) beef bricket, trimmed
Method
Step 1
In a large mixing bowl, combine all ingredients, except olive oil and beef brisket. Whisk until brown sugar and tomato paste dissolved.
Step 2
Heat the olive oil in an instant pot, turned to the sauté mode. Add beef brisket and brown, turning once, on all sides, for 3-4 minutes per side. Pour tomato mixture on and all around browned brisket.
Step 3
Close the pot and lock the lid. Set the machine to cook at high pressure. Set timer to cook for 80 minutes (electric pressure cooker).
Step 4
Unlock and open pressure cooker, using a Quick Release Method. Transfer cooked beef brisket to a carving board. Allow cooling for 10 minutes. Discard cooking liquid from the pot. Slice cooled meat against the grain.
Step 5
Serve meat warm with your favorite sauce aside.
